Pesto Grilled Cheese Recipe
Who says gourmet has to take all day? When you’re ready for a picnic, you’ll want to hit the easy button to maximize play time outdoors. Here’s a lunchtime (or anytime!) goodie that takes four ingredients and 10 minutes to whip out.
What’s the secret to this restaurant-quality grilled cheese sandwich? High quality ingredients and a pesto smear to pop the flavors from ordinary to sublime!
Ingredients:
- 6 slices of country bread
- 8 - 10 slices of Toma cheese (chosen for its exceptional for melting)
- ¼ cup pistachio pesto (or choose your favorite kind!)
- Butter or olive oil
Directions:
Brush 3 slices of the bread with olive oil or butter on the first side, then flip each piece and spread with pesto on the second side. Top with a few slices of cheese. Cover with another piece of bread, and brush the tops with olive oil or butter.
In a large sauté pan over medium heat, warm 1 tablespoon olive oil or butter. Working in batches if necessary, add the sandwiches and press down with a spatula (or set another pan on top as a weight). Cook until the cheese has melted and the bread is crispy, turning once, about 2 minutes per side.
